Friday Evening

The sun came out today and it warmed up to around 50 degrees. I decided to walk to the Jazzercise location to see how the parking situation was and according to google maps, I walked 2.6 miles round trip. It was nice to get out and I had 5200 steps on my pedometer when I got back home.

I plan to go to the 9:00 Jazzercise class tomorrow and see what it takes to sign up with them. Mostly money I'm thinking. :)

This morning I ate oatmeal for breakfast. I always add chia seeds, pumpkin, almond milk and lots of cinnamon. There was a time when I thought I could not eat it without sugar or Splenda but that time is past.

For lunch I toasted two slices of Ezekiel bread and sliced up a hard boiled egg to make a sandwich. I put some mustard on it and it was pretty good.

For dinner we had stuffed green peppers. I cooked some quinoa in the rice cooker and cooked up some vegetables to mix with it. I used four teaspoons of oil for the two of us and threw in chopped red onion, fresh garlic, chopped zucchini and sliced mushrooms. I added pepper flakes and salt and pepper and a little tomato sauce. It turned out better than I thought it would. Mostly I didn't want the vegetables to go to waste. We also had green beans and I had baked acorn squash for dessert.

I still plan to have an apple with a tablespoon of peanut butter before I call it a night. I was thinking as I walked this afternoon how much better I feel already getting away from eating things that are not good for me. I did not eat a lot of sugar during the holidays, but I did eat a few things. Good riddance.

  1. I think that what we eat is totally connected to how we feel. Glad you are getting back to normal. I've been hauling my little bag of homemade food with a cool pack around all over creation.

    More work to eat right, but awesome to feel good. Nice time investment. Onward!!!

  2. Sounds like a nice walk. Lately, just walking in to the building at work seems to be too much to handle for me. Soon that will be different. I'm trying to be a bit more active each day in my effort to stop being so sedentary.

    Your dinner sounds like something I might want to try. Have a great weekend.

  3. I love oatmeal in the mornings. I like to add a sliced banana or other fruit. Yum!
