Yummy Soup and a Walk

Biz over at My Bizzy Kitchen posted a soup recipe a few days ago for Chicken Khao Soi that caught my eye. I asked my daughter if she wanted to try it and she said, quite enthusiastically, "Yes, please."

Yesterday we went to Lee Lee's Asian market and bought some spices that we've never cooked with before like turmeric and coriander. We also got the chili peppers, coconut milk and udon noodles. The only thing we did not get there was bean sprouts as their packages were too big and didn't look as fresh as we wanted.

Today I went early to Sprouts and got the bean sprouts and we made the soup for lunch. I hoped it would be good, but it was even better than I expected. I'm slowly learning to like Thai curry and I'm getting better. For a long time now, I've been able to eat maybe half a serving and then the taste would get to be too much. I think it is because it has a little bit of a sweet taste and I don't think of curry or soup being sweet. That said, the taste is growing on me. This soup is a lot like the curry we get at a place called Chinese Combo. They serve both Thai and Chinese food. Anyway, it would also be delicious with rice instead of noodles and that is probably what my daughter will do with the leftovers. Here is a picture of our soup garnished with bean sprouts and cilantro.



I went for a 45 minute walk outside this morning. Our weather has warmed up a lot and I was actually sweating on the walk. I was also huffing and puffing up that big hill to get back home.

Friday I went  back to Jazzercize and purchased eight more classes which I will ration out at two per week. It was nice to see all the ladies again and they seemed happy to have me back.

  4. The soup looks great! I make a Thai-ish coconut shrimp curry almost every week. The flavor has definitely grown on me!

  6. I saw that soup recipe too but wasn't sure my family would appreciate it. since you said you liked it, maybe we'll give it a try.
    I thought it was warming up enough here to walk outside too but just saw on the news that there's a major storm coming tomorrow that is expected to bring 6-9 inches of snow! I'm so ready for spring!

  7. The soup sounds delicious! I think it's great that you keep moving. It's probably one reason you have been such a successful maintainer. You are a good example for me, and I'm working at moving my body more, even though it sometimes doesn't want to cooperate. I'm a couch potato at heart, so it's good for me to follow your activities.
