I started last week counting both points and calories, but I lost sight of that and stopped. I was averaging 1150 to 1250 daily calories when I was counting. I've been much less focused on my journaling as I've been helping my daughter adjust to gluten free eating. We've been trying new recipes which are most definitely not what I should be eating on a regular basis.
Monday we made a pepperoni pizza for lunch using the Bob's Red Mill pizza crust mix. It was actually pretty good, but I should stay away from such things. I think/hope I've found a solution. I saw that Pillsbury made a gluten free pizza crust and Walmart has it. It comes in a little tub like cottage cheese and says it is for a thin crust. I told S that next time we'll make her a regular pizza using that and I will have my zucchini pizza which I really prefer. After I ate that heavy pizza, I was kind of feeling sluggish for a while.
The next day we made a taco casserole that had broken up taco shells, taco meat, onions, chilies, and cheese. It was delicious but, again, not something I should be having if I want to maintain my weight loss or be healthy.
I was up this morning on the scale to 128.2 which is not surprising. I'm exercising and drinking my water. I'm taking four supplements which are: my eye vitamins, a raw multivitamin I got at Sprouts, vitamin D and a krill oil tablet that was recommended for my dry eyes. So far, I've not seen any noticeable improvement in my eyes. I do have the occasional good day but not very many. I also can't figure out why that day is good. Eye drops are very helpful when it gets too uncomfortable.
