This past week I had an eggplant spoil before I got around to cooking it. Then, I forgot about some celery I had all washed and ready to eat in a closed container and it went bad. My first Weight Watcher leader said to keep your produce out so it was easily seen and hide the peanut butter in the produce drawer. That sounds good except for the limited space in my refrigerator. I make a Sprouts run every ten days or so, but I also buy fresh vegetables at the local stores.
This morning I was busily cooking up three medium zucchini that were close to being lost. I tried this recipe for Zucchini Tots which Curvy Fit Girl mentioned on her blog. These are really delicious. I don't have a mini muffin tin so I made six small muffins and had two for breakfast with a half cup of unsweetened applesauce. Yum.
I still had one and a half zucchini so I just cut them up and cooked them with some onions to have later in the day. I need to only buy what I will cook and eat so I'll be more careful this week when I'm shopping.
I haven't ventured too far since we moved here as I worry about getting lost. It's not easy when you have no sense of direction.
Yesterday morning, it was in the high 70's, but the temperature can rise about five degrees an hour so if I'm going to walk, I need to get out there early. I started out the same way I always do, but where I usually turn around, I kept going. I came to a middle school and then to the main road leading to our subdivision. At that point, I wasn't lost, but I didn't know if I should continue on or turn back. Apparently I was halfway around a circle because I continued on and it took me 25 minutes to get to that point and another 25 minutes to get back home. I didn't have my pedometer so I'm not sure how far it was altogether.
I'm off to enjoy my Silver Sneakers class.
