Yesterday my daughter got on the scale and was surprised to see that she had lost four pounds in the past month. She is not concerned about her weight at all as she is one of those naturally thin people I've always envied. She wasn't unhappy about the loss -- just seemed a little puzzled. "Well," says I, "just think about how much your diet has changed in the past month." Ohhhhhhhhhhh. :)
A couple of weeks ago we were in the produce section of the grocery store and saw a free recipe card we wanted to try. It was called Roasted Vegetable Ragout with Polenta, and the picture looked amazing.
We made it last night for dinner and here is a picture of my plate. There are three little slices of polenta under all those yummy vegetables. I had never tried polenta because I always thought of it as glorified grits and I knew what that was as I grew up eating them. Anyway, that is a mixture of green and red onions, carrots, cauliflower, mushrooms, fresh corn, garlic and tomatoes. Those were all roasted in the oven and the smell was wonderful. We have enough for another meal. We bought one of those ready made "tubes" of polenta rather than make our own. Oh yes, we will definitely make this again.
Monday morning at the gym, we were waiting for another class to finish so that we could go into the room. I asked one of the ladies if they had ever done the stair stepper machine and she said yes. Then she said you have to be very careful or you will end up with a very big butt. I was laughing when I told her that from now on I'll be looking at whatever person is using the machine to see if that has happened for them.
I wanted to try it because I found the three flights of stairs at my daughter's apartment so difficult when I was visiting her in Austin. I would get twinges of pain in my left knee, but most disconcerting was how weak I felt just hefting my bulk to the next step. When I got to the top of the stairs, I would be quite out of breath. After class yesterday, I got on the machine and tried it for three minutes. I had no pain in my knee and I was careful to stand very straight so that my knee didn't go forward too much. I'm going to use that machine for a few minutes each time I go for my class and see if I have any improvement. The test for improvement will be going out into the garage and climbing our ladder. The last time I did that, it was not easy.
