My weather app on my phone is telling me that it is 108 and partly cloudy. It is wrong. I walked two blocks to the mailbox and back, and it is 108 with no clouds at all. Ugh.
Yesterday, I went to my first Weight Watcher meeting since April. There were some nice ladies and one nice guy, but the regular leader of the group was in Singapore with her daughter so we had a substitute. I weighed in and paid my $14 which was more than I expected to pay. They told me that the price had just gone up. I was happy that even at a night meeting, I weighed less than I did in April. I am also happy that I will not have to pay that $14 again as long as I show up once a month for a meeting.
Today we made our first Japanese curry from scratch without using a mix. The Vermont curry mix we've used for years has wheat flour in it and would make my daughter sick.
I found this recipe a while ago and kept hesitating to make it. I hoped it would be delicious but, at the same time, I was afraid it would not measure up to what we usually eat. I was wrong. We made it for lunch today and it was so good! We substituted almond flour for regular flour, and we used a half pound of very lean hamburger instead of chicken. We always put a pound of carrots in our curry and we did that again today. There is quite a bit of heat from the cayenne pepper which we like. The curry mix we've always used is supposed to be hot but it is not.
I have finally given up bottled salad dressing. I have not had any in the house for about a month now except for my daughter's thousand island dressing. I don't like that one so I'm not tempted to eat it. Right now my dressing is a teaspoon of olive oil and two teaspoons of apple cider vinegar and it tastes almost as good as my old favorite which was Girard's lite Caesar. I'm making progress in eliminating more unnecessary and weird ingredients from my diet. Yea!
