It's been a busy week. Last Saturday, we picked up my husband at the airport, and the rest is kind of a blur. Christmas Eve we connected with my daughter and her husband in Austin via Skype. It worked out great, and we exchanged our gifts with them. They were also planning to repeat the gift opening with his parents on Christmas morning.
I made our traditional cranberry pie on Christmas Eve. This year I used almond flour so that my daughter could enjoy some of it. The flour did not change the recipe, and it turned out great.
This morning I weighed in at exactly 130.0 which is a pound or two more than I had hoped for at this point. I have eaten a few extras though, and I need to tighten up before I go up to 132.
Speaking of extras, I'm off to make some gingerbread. It is a gluten free recipe, but definitely not calorie free. We have only made it once. It was even better than we had hoped it would be. My husband wants us to make it while he is here.
